Recipe: Funky monkey banana bread (grain/dairy/sugar-free)

I stole borrowed this recipe from Robb Wolf and made some changes to it to lower the sugar and fat content, and then gave it a snazzy new name.
I've recently gotten some questions lately asking why I use egg whites and omit the egg yolk. Here's the deal - yes, free range, organic egg yolks are chock full of amazing nutrients and precious fat... however, a fat is still a fat and when you have physique goals there can easily be too much of a good thing. What's that smeared on top you ask? Oh, just peanut butter...

Funky Monkey banana bread (Gluten/grain/sugar/dairy-free)

Ingredients:
2 cups almond flour or almond meal (I used almond meal)
1/4 cup flaxseed meal (grind it fresh for bonus points)
1 TBSP cinnamon
4 packets of Stevia (I don't like my stuff really sweet, so more or less.)
1 tsp baking soda
1 tsp baking powder
1 cup (225g) of really ripe mashed up banana
4 egg whites
1 tsp vanilla extract
** Optional: dark chocolate chips, chopped walnuts or pecans, or whatever else makes your monkey the funkiest. I used dark choco chips.

Directions:
Preheat your oven to 375 degrees and grease two mini loaf pans (5.75 x 3.25 x 2.25) or a muffin tin.

In one bowl, mix together all wet ingredients.
In another bowl, mix together all dry ingredients.
Dump the wet stuff into the dry stuff and mix.

Spoon the batter into the two greased mini loaf pans or into a muffin tin that holds 12.

Throw it into the oven and bake for 23 - 25 minutes for muffins, or 25 - 27 minutes for mini loaves, or until a toothpick comes out clean. Remove. Cool. Slice. Top with nut butter, real butter, coconut butter, or whatever you want.

Macros are for the batter without chocolate chips, nuts, or any of the optional extras

Servings: 12
Per serving:
Protein: 6
Fat: 10
Carb: 8
Fiber: 3
Calories: 150ish

Don't get crazy about the macros. To be enjoyed occasionally and in moderation, of course.

  4. Wondering what the Flaxseed meal does for the bread? I have never used it before in my baking.

    1. Good question. Robb Wolf had flax seed in his bread so I kept in in there. It adds a healthy dose of fiber and omega-3's, but from a baking standpoint I'm guessing it acts as a binder. I know you can sub ground flax soaked in water as a substitute for eggs, so maybe it's a binding agent?
      I'm pretty much guessing at this point. :)

    1. It is SO good. I'm 100% convinced that I could make this and fool my family. They'd have no clue that it doesn't have wheat, sugar, or butter in it. So good!

  6. Nice recipe. This is my all-time favorite. But when I entered a weight-management program, I was really worried about the calories. But I think this wouldn't hurt that much.

  7. Am just starting to venture into clean cooking/gluten/dairy free recipes. Had a baking party with my girlfriends this weekend and made these as muffins with dark choco chips and walnuts. Absolutely delicious and enjoyed by all who tried them!! Am excited to continue experimenting :)

  8. How many bananas do you use to get 1 cup? I don't even typically eat fruit on my low carb diet BUT if it is like 2 bananas split over 12 servings I think I will be ok as a treat. Does it freeze well?

    1. Hi Nicole! You can't really measure this out per banana since they vary wildly in size. If you have a food scale, it's about 225g of banana. For some reason I'm thinking it was around 2 medium sized bananas, but don't take my word for that ;)

      I haven't tried freezing it - it never lasts that long in our house. It's THAT good!

      If you do freeze it, I'd love to hear how it is after it is thawed back out!

  10. Hey Chica!! So my hubby was diagnosed with MS last November and he has been Trying to eliminate all gluten, grains, ect. Kind of a take on paleo, they say all that junk is so bad for auto immune diseases. I saw you FB post on all your recipes and I just tried this today!! AMAZING! My 2.5 yr old helped make them and can't stop eating them! I also love your choc cookies! Keep them coming!!
